Oh, to be five again. My nephew Finn requested a guitar cake and tacos today for his fifth birthday lunch at his Nanny and Poppy's house.
The guitar cake was there, thanks to Aunty Bonnie the Baker.
Finn's Nanny Lesley took care of the tacos (and the rest)...a true Mexican feast!
The Stanley's came to the party with the corn dish (and my guacamole) you see above...super easy, and super tasty. I kind of made it up as I went along, but here is roughly what to do:
Ingredients
10 cobs fresh corn
cayenne pepper
1 cup grated Parmesan cheese
3 limes
1 bunch fresh coriander
salt and pepper
1 cup light sour cream
1 cup whole egg mayonnaise
Method
Season the cobs of corn with salt and pepper and wrap in foil. BBQ for about 20 minutes on the grill. Unwrap corn from foil and place on a platter. Top the corn with a generous sprinkling of parmesan, squeezed fresh lime juice, and light cayenne pepper. Spoon the mayonnaise/sour cream mixture on top of each cob (which I combined with salt, pepper and lime juice) and chopped coriander. Garnish the platter with green jalapenos and lime wedges. Serve straight away and enjoy!






Oh crumbs - that is THE coolest party ever. Cool kid with ridiculously cool taste. That cake blows my mind. Wowsers.
